These pancakes are easy to prepare, quick to cook and make for a pretty healthy but delicious brunch. The fruit provides natural sweetness and oats are packed full of protein, fibre and vitamins – keeping you sustained for hours.

Ingredients

2 eggs
75 g Greek yoghurt or quark
Few drops vanilla extract
Pinch salt
50 g blueberries
1 dessert spoon sugar or sweetener
50 g oats
Fresh berries 
Greek yoghurt

Method

Whisk together eggs, yoghurt/quark, vanilla extract, sugar/sweetener, oats and salt.
Rest for 5-10 minutes until the oats begin to soak up some of the liquid. 
Add the blueberries to the mix.
Heat a non-stick frying pan on a high heat and drop spoonfuls of mixture into the pan, spaced well apart. 
Reduce to a medium heat and cook for 3-4 minutes, turn the pancakes over and cook for a further 2-3 minutes.
Serve with your choice of fresh berries and Greek yoghurt.

Tip

You can change the fruit depending on what’s in season.
